How healthy is your food?

Answer: it ranges to 1-10 depending on what you order. Buy from the right places (union square farmers market). All meat comes from good places. They make their own everything.

 

Where do you buy your fruit and vegetables from?

Answer: union square farmers market 4 days a week. Vegetable producer.

 

Where do you buy your meat from?

Answer: Debroga, whole animals that work with small for farms and use the whole animal. Happy valley meat. They go shopping in the market and walk back.

 

What do you think are the most important qualities of a restaurant?

Answer: staff. The quality of food, but most important is a diverse interesting passionate group of staff. Being able to make people feel good.

 

What differs Maysville from other restaurants?

Answer: they provide a big selection, they have a bar and restaurant, they can have snacks or a big dinner or a party. They can give a bunch of experiences. They have over 200 American whiskeys (none other restaurant)

 

Why would people pick a fast food or convenience store?

Answer: a lot of reasons. It takes a lot of time and experience and being able to make healthy food has taken 9 years of professional cooking. A lot of people forgot how to cook bc of restaurants. People just don’t know how to cook. Access to food is different too being in Manhattan means we have access to a lot of different food but a lot of people don’t. Here there’s somewhere you can get good ingredients everywhere all the time but a lot of places there aren’t. The health standards are good.

 

On your menu, are the unhealthier foods priced the same as the healthier foods?

Answer: nothing exceeds $30, and they don’t really price based on healthiness

People used curing meat they would freeze and cure it and eat it for months on end.
