• 1/2 pound pad Thai rice noodles
• 2 tablespoons Asian fish sauce
• 2 tablespoons oyster sauce
• 2 tablespoons sugar
• 1 tablespoon soy sauce
• 1 tablespoon chile-garlic sauce
• 2 tablespoons vegetable oil
• 1/2 pound skirt steak, thinly sliced crosswise
• 1/2 pound broccoli, stem trimmed and cut into 1-inch pieces
• 2 small shallots, thinly sliced
• 2 garlic cloves, thinly sliced
• 4 scallions, cut into 1-inch pieces
• 2 large eggs, lightly beaten
• 1 cup bean sprouts
• 1/4 cup ground roasted peanuts
• 1 lime, cut into wedges

step one: cook the noodles in hot water for 15 minutes

step two: mix together the sugar, soy sauce, oyster sauce, fish sauce, and chile garlic sauce

step three: cook the beef for about 5 minutes with the garlic

step four: transfer the beef onto a plate and cook the broccoli with 1/4th cup of water in the same pan with the shallots

step five: add the noodles in and pour the sauce over

step six: push the boodles to the side of the pan, slightly scramble the eggs and add them to the noodles

step seven: plate the noodles with the peanuts, and scallions, and lime
