Sophie R – Update #7

This week, since I’ve been kind of at a slow point in my research, I have been trying to get more creative with recipes and figuring out ways to eliminate my food waste. This week I made veggie dumplings (which included ingredients in my fridge that would have likely been wasted otherwise).

Here’s the recipe:

1. Dumpling wrappers
– I bought dumpling wrappers but they can be made using flour, salt, and water.

2. Filling
Ingredients:
– freshly minced garlic and ginger
– (3 cups) shredded cabbage
– (2 cups) chopped shitake mushrooms
– (1.5 cups) green onion
– (1 cup) shredded carrot
– (2tbsp) soy sauce
– pepper to taste

Steps:

1) Add oil to a large pan and cook garlic, ginger, and cabbage until cabbage significantly reduces in size

2) Add your mushroom, green onion, and carrot – then soy sauce and pepper

3) once the majority of the liquid from the mixture cooks off, fill your wrappers and pleat to seal them.

4) To cook your dumplings you will need a large pan with a lid. Coat the bottom of your pan with a thin layer of oil and place your dumplings in the pan so they are not touching. Cook for a couple minutes till the bottoms of your dumplings turn golden brown. Then put 4-5 tablespoons of water into your pan and cover immediately with your lid. Steam for 5-8 minutes.
