The third recipe that I cooked so far in my project are my grandmothers bolitas de queso (cheese balls). My grandmother is a Holocaust survivor who escaped from Romania in the 1940’s traveling to Paris and then finally settling down in Bogota Colombia. Although she left Romania as a young child, as a mother living in Colombia she would always cook cheese balls and use a recipe that stemmed from her aunt. I do not really connect to my Romanian heritage other than by my looks (slightly) and this recipe allows me to do so.
Another aspect of my senior project is making a compilation of my family’s recipes into a book. For this blog post I wanted to share het recipe as it is pretty simple and also tastes really good.
Ingredients:
3 tablespoons of sugar
80z of farmers cheese
1/2 cup dry mix cream of wheat
2eggs
salt to taste
Step one: beat eggs and cheese smooth
Step two: fold in cream of wheat
Step three: push the mixture to the middle of the bowl and let cool for 1 hour
Step 4: form into balls
Step 5: Add balls into simmering water (after it’s been boiled.) They will rise to the top when finished
Step 6: Serve cheese balls with sugar and either more farmers cheese or sour cream depending on taste preference.
