Me and my group interviewed Nicole Rosow who is the director of sustainability at IE University in Madrid. her job is to make sure that the appropriate departments do their job to ensure that their carbon footprint stays low. She also helps to regulate food at events in the university to make sure that too much food isn’t made. she told us how the university puts in a lot of effort to make sure that recycling is easy and accessible. Another part of her job is to ensure people have a positive view of sustainability and that the university is pushing awareness about the topic of waste.
She also told us about her partnership with an organization called “Too Good To Go”. at the end of the day they give students and staff reduced food prices that would have gone to waste. which I think is a very good organization to look into if you want to help with food waste. Nicole also informed us on how Europe is different from the US in terms of food waste. She said that in Europe people care much more about reducing food waste than the US. The US can learn from Europe and how they help stop food waste and try to copy them in a good way.
