For my senior project, I plan on working under the head chef at our school Chef Eric. Not only will I be shadowing him but throughout the process, I will also help out around the kitchen. Doing prep work, washing dishes, and maybe eventually actually cooking the food. I will work in both the Highschool kitchen and also the Middle and Lower school kitchen. My project has been thought out in a way that allows me to gain the necessary knowledge and experience to pursue a career in culinary arts. With the experience of working in a professional kitchen and the potential connections I may gain from doing this, I will be able to enter the culinary world with some level of knowledge that will prove useful. I have been interested in cooking for a while now and having the resources available to pursue this passion is great. Throughout the project, I will keep notes in a notebook for when I have meetings with Eric and we plan out potential menus. Not only will I be learning from experience but through shadowing Eric I will learn technical skills as well as skills that might require more thought such as “how to run a business with an emphasis on cooking?” This project fills all four buckets in that I am working for the school without pay, I am gaining experience through my actions in the kitchen, I am gaining academic knowledge through learning about how to plan a menu, and I am being creative in that I will be creating my own menu.
